+ Message auto-fit can be reverted (canceled) for just that one message with Menu -> View -> Revert Auto-Fit

+ All new text editor on the compose screen (Android 6.0+, needs WebView 60 from June 2017 or newer).

Limitations: dark theme is not supported (the editor is always white), maybe others I'm forgetting right now

I suggest that you make double tap (in message view)  enable "Revert Auto-fit" ? This would be much easier than having to access this feature deeply inside context menu.

We'll think about it It's just that double tap is already intercepted by WebView itself - to zoom in / out.

Very unlikely.

Yes you can turn off the new editor in app settings -> composing and sending.
