I suspect that the fact that you see and empty "Reply-To:" field while composing a new message might be a behavior introduced in one of the more recent versions then mine.
Hopefully, Kostya will shed some light on this behavior soon.
No, the strange behavior is not related to the recent versions, since I'm using build 1.8.2-205 and composing a new message starts with 'collapsed' address header = only the "To" field is shown.

I believe, the issue (question) is different: In your case, if you click on the icon that reveals "Cc/Bcc" (looks like two heads), - do you see only Cc and Bcc, or also Reply-To ?
In my case (1.6.x), unless I have "Reply-To" configured for a specific address, I see only Cc and Bcc. If Reply-To is configured, then it also shows up with Cc and Bcc.

In case of OP, I believe, even an empty Reply-To shows up when Cc and Bcc are shown.
The behavior is different in the new version 1.8:
The "Reply-to" field appears - together with CC and BCC - if you tap on the menu item "Show CC/BCC".  However, the design team moved this item from the menu to the end of the "To" field (the small arrow on the right side). The icon looks like 'two heads" isn't available in versions 1.7/1.8.

The issue of the new designed option now is that the "Reply-to" field is shown - regardless if the item "Reply-to" (in Account settings -> Options and folders -> Composing and sending -> Reply-to) is filled or even empty (screenshot #3).

@Mikeone: from this screenshot of yours: https://www.aqua-mail.com/forum/index.php?topic=5445.msg32443#msg32443 , I see that you do not have "Reply-To:" showing up. So, it is unlikely to be a feature of the new version of the app.
The functionality to "Show (hide) CC/BCC" has changed with the new build 1.8... and it is a "step backwards" (= less functionality / usability as before)!

Yes, the UI and the mechanics of those additional fields have changed in 1.8.

They're either all visible or all hidden, where "all" means "CC + BCC + reply to", all three.

Before, the "CC + BCC" had their own menu item (and their own X = close) and "Reply To" had its own menu item (and its own X = close).

I'll pass this on to the design team.

Just a quick clarification: I am not sure if in the earlier versions it was possible to open "Reply-To:" "on demand" (as it could be done for Cc/Bcc), i.e. when it is not set in the settings.
In that regard, the ability to open that field on demand is probably a good addition for some users. At least that's the result of my thinking about this feature, even though I am not using it myself.

It was, had a separate menu item from the "show CC/BCC" menu item.

I think the "expander" icon for showing CC/BCC is better than having to go to the menu (before 1.8).

What I think is a usability and a design regression is that now all three (CC + BCC + Reply-To) are all visible when any one of them has any data.

And this regression is having an impact because CC is used quite often, BCC less so, but "it's just like the CC although not exactly", but the Reply-To is "a whole different thing so why in the world is it visible".

I agree with that. {*}

I was even thinking about use cases when Reply-To: would be needed to be used "on demand". I had problems coming up with those, but decided that there must be some, so, it's probably better to have that flexibility.

My vote is still for the write-in From: [wink-wink!...].  ;)

{*} I would just note that Bcc should be used more frequently by people. I use it very frequently, to avoid exposure of large lists of addresses and also to avoid unwarranted "Reply-All" by some thoughtless people.

It doesn't matter to me (it's a purely "academic" question at this point), but I looked again and I don't think there was/is a way to bring up "Reply-To:" in 1.6.x "on demand", even via a menu. The only way I could find to show it is to configure it in the settings. Then it would be shown, and you can edit or delete it. But if it is empty in the settings, you cannot bring it up to "write in". 
So, the possibility to "expand" "Reply-To:" on demand is probably useful to some users.

Prior to 1.8, there was a menu item (never an icon) to "Show reply-to". And to clear / hide, there was an "X" on the right side.
