manual email retrieval

I have several email accounts.  I would only want to retrieve emails from one or two occasionally.   I haven't been able to find a set for that.  Can it be done?

You will find this option in the "account settings":
-> long press on the account name -> Options and folders -> Account options -> disable (uncheck) the option "Push mail" (the setting will only apply to this particular account)

What @mikeone has suggested is correct, but it only covers "Push" (And that is disabled by default). Scheduled sync is enabled by default, - and that's what you want to disable to avoid automated email retrieval. It is in the same area under as @mikeone described, just under "Scheduled sync" section.
You may also double check that nothing is enabled in the "Events" section (default is "disabled").
Once you disable the scheduled sync, Push, and on-events sync, the app will not sync that account.

And to manually check a particular account, you can either touch the wheel next to the account in the account-list view, or if you are in the message-list view, - pull the list down from the top and release, - it will sync the folder you are viewing.

And also if you want to check mail from the app's main window, in several accounts "at once", you can just "pull to refresh" there, or use the refresh icon in the "title bar" (icon bar), not the ones next to each account.

To exclude some of your accounts from this "check all accounts from main window" specifically -- you can long press an account -> options and folders -> account options -> turn off "include in Sync All".
