How do I add a signature to all outgoing Emails?

How do I create sub-folders in my Inbox?

No option to created sub-folders below inbox

I am not sure if creating subfolders of Inbox is even possible in Aquamail (or any other mail app), but I strongly recommend never doing that.
Even if that would be possible in some e-mail app, you are asking for trouble.
Inbox is a special folder, with a special functionality. And mail protocols (IMAP, POP3) are not designed to deal with subfolders of Inbox.
Create any other folders and sub-folders instead.

> Go to the app's main window (Account list view) > Long press on the account name > Options and folders > Folders > on the top right edge you will find a "+"  symbol: tap on it and create a new folder.

This option is only available with IMAP (and Exchange) accounts since the POP 3 protocol does not provide functionality for creating folders or managing email in folders. Therefore, it is not possible for a POP3 client to provide this functionality.

Please read the notes below:

(1) Mail clients such as Outlook or Mozilla Thunderbird download email from POP3 and manage email in folders on your local computer.
(2) Many mail servers implement both POP3 and IMAP protocols. Microsoft Exchange Server is one such mail server. In these cases, it is possible to create and manage folders via the IMAP protocol.
(3) Some POP3 mail servers provide the ability to create sub-folders. However, access to those folders is specific to the brand of mail server. Also, the creation an management of the sub-folders is not available in a programmatic way, and certainly not via the POP3 protocol (because there are no POP3 commands related to folder management).

However, you could create folders directly within the webmail interface of your email provider.

In message view you will see an action bar - usually on the bottom of the screen -. 'Behind' the overflow button (3-dots in the right)  you will find the item "Move to folder"

Worked it out finally, getting used to Aquamail functionality in IMAP, much the best email client for android that I have tried

You can also configure one swipe action to be "move to folder ", if you wish.
