Just to add my two cents:

I could add a "create folder" feature for IMAP / EWS, but "create" implies "delete", and then I'd start getting messages like "Help, I've just deleted 10,000 messages from Donald Trump regarding a $100BN real estate deal". Wont matter if Aqua was asking for a confirmation when trying to delete a folder, either.

So, since this is not an everyday operation, please follow Mr Paris Geek's advice and create your folders in web mail.

It makes sense to create the folders in the webmail and sync with it. But there is one related feature I miss. The ability to move a message to another folder as in Thunderbird. There exist the options to move to Deleted and to Spam, but not to other folders unless I missed it. Is there? .

By default, not all folders are shown.

You can open the Inbox, tap "Inbox" in the window title, then tap "Other folders...".

Same with moving messages, there is an "Other folders..." in the "where move to" dialog window.

The FAQ has more information on working with folders. Basically, you can access them "as needed" or set to be kept up to date, just like the Inbox.
