Title: How do I enable a 'reduced' accounts list?

Hi,

great app, love it!

When I open Aquamail, it shows me a list of all my accounts including the folders, so each account's folder structure is already expanded.
Is there a way to just have a list of the accounts, and then only expand the respective account's folder structure, once I tap the account?

Yes, You can find this option in the app's settings:
-> go to the Account list view (the app's main window) -> Menu (three-dots button) -> Settings -> Account list -> tap on the first item 'Expand accounts -> choose 'none' or 'With unread messages' (could be very useful)
