Microsoft Exchange auto completion is now broken. When I look through the GAL, all addresses are now prefixed with "SIP:" or have some code and are undeliverable.

Look through GAL where? In the Contacts app or auto-completing in the recipient entry fields?

And those unwanted "things" are -- I assume -- are showing as "human name" or the found entries?

E.g.:

sip:blah X400/CN/O=foo
foo@bar.com
---
John Smith
john@smith.com
---

that sort of thing?

The "human name" values were not showing at all prior to this build (in GAL search results).

But using sip or X400/500 addresses as "human name"-s isn't exactly right either.

Debug log please, with "raw session data", you can send it to kmansoft / gmail and I'll look at it today.

PS - @stevealb a screenshot to accompany the log would help too.
